Age of Construction Considerations

  • Buildings newer than 20 years old are preferred
  • Buildings older than 20 years must have updates made to the roof, electrical, plumbing, and heating

Swimming Pool Considerations

  • If outside, the pool must be protected by a fence at least 4’ high
  • All water depths marked clearly
  • No diving boards allowed

Commercial Cooking Considerations (Compliant to NFPA Code 96)

  • Has a UL 300 wet chemical automatic fire extinguishing system
  • Extinguishing system is inspected bi-annually
  • When the extinguishing system is activated, the fuel supply is shut off
  • Exhaust ducts must be 18 to 20-gauge steel and cannot pass through any firewalls
  • Grease filters should be UL-listed and regularly changed
  • Hoods and ductwork are kept clean on a schedule
  • Deep fat fryers should be equipped with a separate high limit control in addition to the adjustable thermostat once the temperature reaches 475 degrees Fahrenheit one inch below the surface
  • Deep fat fryers are installed with a minimum of 16” space between the fryer and surface flames from adjacent cooking equipment.  This requirement is waived if a steel or tempered glass baffle is installed >8” between the fryer and adjacent surface flames
  • Class-K fire extinguishers are regularly serviced
  • No Class-B fire extinguishers allowed in the kitchen area
